To make the cordial, combine the lime zest, sugar, salt, cinnamon, ginger, pepper and cloves. The ingredients should be mixed well until the sugar becomes green and aromatic. Add the lime juice to whisk the sugar in. Cover and refrigerate up to 24 hours. Strain the solid components and refrigerate the cordial.
