Chai Masala, a quintessential component of traditional Indian chai, is a fragrant blend of aromatic spices that transforms a simple cup of tea into a sensory delight. The history of Chai Masala can be traced back to the vibrant tea culture of India. The popularity of black tea in India was limited until the early 20th century when the Indian Tea Association launched a promotional campaign.

This initiative aimed to boost black tea consumption by advocating for tea breaks in factories, mines, textile mills, and supporting independent chaiwalas along the expanding railway system. The campaign played a pivotal role in transforming the cultural landscape of tea consumption within India, making black tea a widely embraced and integral part of daily life.

Start by preparing the magical blend of spices. Take cloves, cinnamon, cardamoms, and pepper, giving them a good crush to bring out their delightful flavours. No need to be too precise – a rough crush will do the trick just fine. In a pot, bring 1 cup of water to a gentle boil. 

Once it starts to bubble, toss in 2 teaspoons of loose tea leaves and the crushed spices. Let them mingle in the pot over medium heat. As the infusion begins to simmer, add 1 cup of milk and 2 teaspoons of sugar. Stir gently, and bring it to a simmer. Let the brew simmer for about 5 minutes. Strain the spiced chai into your cup.
